How to make avocado, spinach & blueberry baby food

I know I have a lot going on these days… but there’s something calming about making my own baby food for the kids. I did it with Camden and I’m doing it again with Kate and I really enjoy it. Plus, I’m saving money!

I started out with bananas, butternut squash, sweet potatoes and avocado to get Kate used to the basics. Now that she’s six months old I wanted to introduce a little more variety into her diet. Last weekend I made her banana and avocado and I had two leftover avocados so I went ahead and peeled them and wrapped them in plastic wrap and put them in a ziploc in the freezer so that I had fresh avocados and they didn’t go to waste. That’s my biggest pet peeves about avocados, you have to use them when they’re ready or they’ll just get nasty!

Sooooooo, pro tip: When you notice you have ripe avocados but you don’t plan on using them that day, cut them open, remove the pit, peel the skin off and wrap them up and freeze them. They’ll come in handy when you want to make some guacamole, avocado mash or baby food like me!

The avocados I got from Costco still have a few days to get ripe so I pulled out my frozen avocados and put them in a strainer on top of some boiling water to help thaw them out. Once they were thawed, I put them aside and added a couple handfuls of fresh spinach to the strainer and let that steam. Spinach cooks down really fast so I added some more halfway to get a decent amount for the baby food.

While the spinach was cooking, I put my thawed out avocados into the Ninja and puréed them. After about 10 minutes, I added the spinach on top and a few small scoops of the boiling water to get a thinner consistency to the avocado and the spinach. I let the Ninja rip and go to town on that while I added some rinsed off blueberries to the strainer and let them steam for about 5 minutes. These will be ready quick. You’ll notice the water starting to turn purple while you’re steaming them!

Then I added the blueberries to my Ninja and puréed it all together! Kate was sitting in her highchair watching me do all of this and as I started scooping into her little baby food containers (These are the ones I got from amazon and I love them) she was acting like she wanted to eat some. So, I went ahead and gave her a few bites. She loved it! SUCCESS! Rave reviews from the 6 month old who loves to eat!

This recipe was super easy and I’ll definitely make more of it down the road! I bought some awesome baby food containers that came with a little marker so that you can write on the lids and mark what they are and then erase it for your next batch.
